Foliage on plants is usually renewed in the Spring to produce juvenile or Spring foliage. This matures to its Summer Colour. In Autumn, the deciduous tree/shrub may change the colour of the foliage as it removes the parts it wants before discarding the leaf, or other plants may change their foliage colour in the autumn. Usually there are no leaves on the deciduous trees/shrubs during the winter, but other plants may change their foliage colour during that time.
